Blueberry Muffins

I just felt like making some yummy Blueberry muffins. I love blueberries. Did you know that blueberries are a super food? Here is a list of super foods. Be sure to eat your super foods!
It's not a good photo because of the shadows...but the muffins still look yummy.


Blueberry Muffins Recipe
1 egg
1 cup milk
1/4 cup vegetable oil
2 cups Gold Medal Flour
1/4 cup sugar
3 teaspoons baking powder
1 teaspoon salt
1 cup fresh blueberries or 3/4 cup well drained frozen thawed blueberries

Heat oven to 400 F. Grease bottoms only of 12 muffin cups. Beat egg; stir in milk and oil. Mix flour, sugar, baking powder and salt just until flour is moistened (batter will be lumpy). Fold in blueberries. Fill muffin cups 2/3 full. Bake until golden brown, 20 to 25 minutes. Immediately remove from pan.   


Lots of people are now getting their Health Insurance open enrollment information and are finding their insurance has been cancelled or raised or Insurance completely modified to be only Catastrophe Insurance. I am really hoping and praying that the new elected leaders and those that remain get us back on track with our health insurance and get this economy back healthy again and stop spending money and creating new entitlement programs we can't afford. We will get our bad news or hopefully not so bad news in the spring. I pray it will not be bad. I really love our insurance plan. I get so angry when I think about how our insurance has been messed with. Now that Steve and I are getting older and have paid into health insurance all these years it might be that we end up with completely unacceptable insurance and completely insufficient to our needs. But not to worry the playing field was just made even, so everyone is equal, even if they have not earned it. Now because of this government my husband I must suffer. Great!
Try teaching this method to a child with his Christmas presents, halloween candy or grades that he earned. It's called Socialism and I say no thank-you!
I might add that my husband and I give what we want to give and we don't need the government to take from us to give to others. It might work great for them, but it's not working great for us. 

In our own budgets all across the country many people have had to cut back. Our government works for us not the reverse, but these days it seems we work for them when their salaries are higher along with great pensions and perks. The private sector middle class American job is under assault. But the government votes themselves raises and tries to tax us for more pet projects. I am really sick of it. I find it absolutely disgusting and down right immoral that our Unties States of America Government has done this to the American people. But I guess you can say it's our fault for voting for the leaders we have, there is a saying that folks get the government they deserve. In other words vote wisely.    

Joseph de Maistre (1753-1821) wrote in 1811: “Toute nation a le gouvernement qu’elle merite.” ("Every nation has the government it deserves.")

1 Timothy 2:1-2, says we should pray for everyone, including "kings and all those in authority, that we may live peaceful and quiet lives." 

In the mood to take a quiz to see how much you know about the bible? They say that atheist and agnostic do better on this test then Christians. I got 54%. I only did it once but afterwards if you go through all the reading you can see the answers. As I was reading the answers I noticed my first instinct was right on many of the questions I missed. So go with your instinct or first thought. Take the test and tell me what percentage you got. Here is the link. I took it a second time, not reading the answers and got 73%. I will have to look later at what I am missing, but much of it is about other religions which I do not know those answers.

    Those blueberry muffins look delicious! My mom and dad, and my family have blueberry and blackberry bushes. We enjoy them a lot!
    Yes, we should definitely pray for those in leadership!
    I scored an 87% on the quiz. I was surprised. I knew the Bible questions, but I had no clue about some of the other ones!

  2. Mmmmmm, I love blueberry muffins and your look delicious, Kat! :) I took the test and I scored 67%. I got wrong all the "According to rulings by the U.S. Supreme Court..." ones, LOL! But since I am not an American, I think I did great ;D

  4. I missed the one about reading the Bible in public schools and the one about Vishnu and Shiva...never heard of 'em!
    I grew up in a Pentecostal church too and now my husband pastors one!

  5. Hi Kat! Thanks for your comments about our new puppy! I'm hoping to have photos tomorrow. They are protected on the breeder's website and although I know ways around that, I wouldn't feel right snagging them! Especially after this quiz! LOL

  7. I appreciate you visiting with me and I'm enjoying my visit with you tonight. Blueberry muffins are my favorite. One summer, a co-worker let us pick our own berries and we had so much fun.   9. Yum! We love blueberry muffins. My 4 year old actually told my mother she needs to eat more blueberries because they have antioxidants and those help with wrinkles...kids, so darn honest!
